Scallion Pancakes

Step 0: 面团 Dough

面粉 Wheat flour(Type 405, 10% protein) 320 g
食盐 Salt 3 g
温水 40 ℃ Water 40 ℃ 175 g
大豆油 Soybean oil 5 g

0.1: 将食盐与面粉充分混合。 Premix the flour and the salt sufficiently.
0.2: 将水少量多次加入混合物中,每次加入水后与面粉充分混合,先形成小颗粒,最后揉成团。 Add a small amount of water to the mixture several times, make sure the water is absorbed by flour after each addition and form small particles first. Finally, knead all into a dough.
0.3: 向面团里加入油,继续揉至几近表面光滑。 Add oil into the dough and continue to knead until the surface is almost smooth.
0.4: 将面团分成单张饼的小份(6~8份),浸泡油中至少二十分钟以增强延展性。 Divide the dough into small portions (6~8) and seal them in soybean oil for at least 20 minutes to increase the ductility.

Step 1: 油酥 the sandwich part

面粉 Wheat flour(Type 405, 10% protein) 12 g
食盐 Salt 1.5 g
白胡椒粉 White pepper 2 g
大豆油 Soybean oil 25 g

1.1: 在一个耐热的玻璃或者瓷碗中放入面粉,食盐以及胡椒粉,充分混合。 Put flour, salt and pepper in a heat-resistant glass or porcelain bowl and mix well.
1.2: 将油加热至微微发烟约230 ℃,倒入混合物中,搅动。 Heat the oil to slightly fuming about 230°C, pour it into the mixture, and stir.
1.3: 取四条葱,顺纤维切细,再切成葱花。 Take four green onions and cut into tiny pieces

Step 2: 包埋卷制

2.1: 取一个小面团,单向推擀切莫往复,擀薄至可微微透光。 Take a small dough, roll it out (in one direction, not back and forth) so thin that it can transmit light slightly.
2.2: 刷上一层薄薄的油酥,撒上少量葱花。 Brush with a thin layer of the mixture(1.2) and sprinkle with a small amount of chopped green onion.
2.3: 将面皮小心卷起来,确保紧实。 Carefully roll up the dough.
2.4: 用刀尖将面卷平均切开,但一端不断。 Use the tip of a knife to evenly cut the roll, but one terminal remains as original.
2.5: 将两侧的条,向内侧盘起来,并且重叠,稍微压实。 Wrap the strips on both sides to the inside, overlap them, and press them together slightly.
2.6: 放置15分钟左右(否则很难擀薄)。Leave it for about 15 minutes (otherwise it will be difficult to roll out).
2.7: 单向推擀切莫往复,将面饼擀薄。 Roll it out (in one direction, not back and forth).
p.s. The raw pancakes could be frozen to preserve for a quite long time.

Step 3: 煎烤

将平底锅加热后,放入极少量的油,将面饼两面烤熟,微微有些焦黄即可。 After heating the pan, add a very small amount of oil, and bake both sides of the pancakes until it is slightly browned.
